Aloo Paratha


Aloo paratha is a Noth Indian dish. It has good carbohydrate value. It is good for taking as breakfast and dinner.

Ingredients:
Two potatoes, coriander leaves, one tablespoons of ginger-garlic paste, two to three green chillies, two to three cups of wheat flour, two tablespoons of oil and two tablespoons of ghee, salt to taste.

Method:

Making the dough:
Mix the sieved wheat flour with the two tablespoons of oil and sufficient amount of salt. Now carefully sprinkle water to the flour and knead with the mixer simultaneously. Precaution must be taken such that the dough does not become gluey. Now slowly add water and repeat the process of mixing the dough until the dough becomes fluffy. Leave the dough closed in a container for one hour. Now make desirable number of balls from the dough
Cook the potatoes and mash them well. Grind coriander leaves and green chillies. Add this to potatoes. Add ginger-garlic paste and salt. Now fry this mixture of potato for five minutes in a frying pan using oil.
Take a small ball of dough, spread it like a circular layer, take a ball size of potato stuffing, keep it on the dough and close the dough over stuffing. Fry the dough on tava, apply ghee on both sides. Serve hot.

Ideal side dish: This can be taken without any side dish. The standard ideal dish is vegetable kuruma.

Mint Dosa


Ingredients:
Half cup of rice, three-fourth cup of black gram, oil for cooking, green chilies, mint leaves, two tablespoons of bengal gram, one tablespoon of mustard seeds, salt to taste and water.

Method:
Preparing the batter:
Wash the rice and black gram with water separately. Soak the rice and black gram separately in water. Now grind them separately using water. After grinding mix them together. Now keep this batter aside for at least six to eight hours for the process of fermentation. After the fermentation is completed, prepare the fried mint. For preparing this, heat three tablespoons of oil in a frying pan. After the oil gets heated put the mustard seeds in the oil. After the mustard seeds make a popping sound add mint leaves, bengal gram, two numbers of chopped green chillies and a pinch of salt. Fry them for two minutes. Now add this to the fermented batter and add sufficient salt and mix the batter well. Now the batter is ready for cooking.

Cooking mint dosa:
Now keep the tava on fire. When the tava gets heated, grease the surface with a little amount of oil. Now using a ladle, pour a ladle full of batter on the tava and spread it into a flat-circular form. Now pour half tablespoon of oil around the circumference of the batter. Now when the one side of the batter is cooked well, take it using a spatula carefully and keep the uncooked surface resting on the tava for cooking. Now after cooking the another side of the batter take it out of the tava using the spatula. Now the batter is turned into a delicious dosa. Serve it hot.

Ideal side dish: coconut chutney and sambhar.

Dosa with spice


Ingredients:
Half cup of rice, three-fourth cup of black gram, oil for cooking, two onions, green chilies, curry leaves, two tablespoons of bengal gram, one tablespoon of mustard seeds, salt to taste and water.

Method:
Preparing the batter:
Wash the rice and black gram with water separately. Soak the rice and black gram separately in water. Now grind them separately using water. After grinding mix them together. Now keep this batter aside for at least six to eight hours for the process of fermentation. After the fermentation is completed, prepare the fried onions. For preparing this, heat three tablespoons of oil in a frying pan. After the oil gets heated put the mustard seeds in the oil. After the mustard seeds make a popping sound add five curry leaves, chopped onions, bengal gram, two numbers of chopped green chillies and a pinch of salt. Fry the onions till they turn golden brown color. Now add this fried onions into the fermented batter and add sufficient salt and mix the batter well. Now the batter is ready for cooking.

Cooking onion dosa:
Now keep the tava on fire. When the tava gets heated, grease the surface with a little amount of oil. Now using a ladle, pour a ladle full of batter on the tava and spread it into a flat-circular form. Now pour half tablespoon of oil around the circumference of the batter. Now when the one side of the batter is cooked well, take it using a spatula carefully and keep the uncooked surface resting on the tava for cooking. Now after cooking the another side of the batter take it out of the tava using the spatula. Now the batter is turned into a delicious onion dosa. Serve it hot.

Ideal side dish for onion dosa: any chutney, sambhar.

Tasty fast food


Chicken fried rice is a blend of Chinese and Indian food. This dish is very famous in fast food centers of Chennai which is the capital of Tamilnadu. It is not advised to take this food often. It is a good one for the dinner.

Ingredients:
Six cups of basmati rice, one cup of chicken, one egg, half cup of capsicum cut into fine stripes, one cup of chopped onion, one cup of finely chopped spring onions, two tablespoons of ginger-garlic paste, one cup of a mixture of vegetables, oil, half tablespoon of pepper, soya sauce and chilli sauce.

Method:
Parboil the chicken in a cooker. Now cook this chicken with a little amount of soya sauce and chilli sauce. Keep this chicken aside. Wash the basmati rice and soak it in water for three minutes. Boil the rice till the rice gets cooked. Care should be taken such that the rice is not overcooked. Keep a frying pan on the fire. Now put four tablespoons of oil into the pan. After the oil gets heated put the onions into the pan. Now fry the onions till they become light brown. Now add the ginger-garlic paste to the fried onions and fry this mixture till the ginger gets fried and turns light brown color. Add the capsicum, spring onion and finely chopped vegetables to it . Now fry the egg separately with small amount of salt and pepper. Now add this fried egg to the fried vegetable mixture. Add the rice to the fried mixture and fry the rice by mixing a small amount of soya sauce and chilli sauce. Now mix the cooked chicken to the rice and fry the mixture for three to five minutes. Now the delicious Chicken fried rice id ready.

Ideal side dish: Chilli chicken, tomato ketchup.

Dosa with carbohydrate value



This dish has some carbohydrate value. This is an ideal food for the breakfast.


Ingredients:
one cup of mashed potatoes, one cup of rice flour, Five to six strands of coriander leaves, one tablespoon of ginger-garlic paste, two to three numbers of chillies, two tablespoons of curd, oil for cooking, salt for taste.

Method:

Making the batter:
Wash the potatoes and mash them well. Now fry the mashed potatoes with ginger-garlic paste, finely chopped chillies and a pinch of salt in a frying pan . Now mix this with curd and finely chopped coriander leaves. Now add the rice flour with this fried-mashed potato and add some water till we get the consistency of dosa batter. Add sufficient amount of salt and mix them well. Now the batter is ready. Keep this batter aside for fifteen minutes before cooking.

Cooking the dosa:
Keep the dosa tava on fire. After the tava gets heated, grease the surface with a small amount of oil. Now pour a ladle full of batter on the tava and spread it in a circular motion so that we get the batter in a flat-circular form. Now pour half tablespoon of oil around the circumference of the batter. Now when the one side of the batter is cooked well, take it using a spatula and keep the uncooked surface on the tava for cooking. Now after cooking the another side of the batter take it out of the tava using the spatula. Now the batter is turned into a potato dosa. Serve it hot.

Ideal side dish: any chutney, sambhar, vegetable kuruma.

Sweet and healthy food


Ragi-jaggery dosa is a type of dosa with diet value.This is a sweet dosa.

Ingredients :
One cup of ragi, half cup of jaggey, one tablespoon of cumin seeds, eight green chillies, one small piece of ginger, curry leaves, coriander leaves, one tablespoon of salt and one tablespoons of oil and a little amount of oil for greasing, water.

Method:

For making batter:
Mix ragi with water to make the batter. Heat two tablespoons of oil in a frying pan. Now put the chopped green chillies, chopped ginger, six curry leaves into the heated oil and fry them for three minutes. Now mix the fried mixture and ground jaggery with the batter. Finely chop the coriander leaves and mix it with the batter. Now add the salt to the batter and mix well. Keep this batter aside for twenty minutes.

Cooking ragi dosa:
Now keep the dosa tava on the fire. Now grease the dosa tava with little amount of oil. Now pour a ladle of the prepared batter at the centre of the dosa tava and spread the batter into a circular from and pour a little amount of oil around the circumference of the batter. Now cook the uncooked surface of the batter by flipping it using the spatula. Now serve the ragi dosa hot.


No side dish needed for this dish.
